  • 2 large potatoes, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded cheese (optional)
  • Sour cream (optional)
  • Fresh cilantro, for garnish
  • Taco shells or tortilla chips

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced potatoes with olive oil, chili powder, cumin, salt, and pepper. Spread them out evenly on a baking sheet and bake for 25-30 minutes, or until they are golden and crispy.
  3. Combine the baked potatoes, black beans, corn, diced avocado, and halved cherry tomatoes in a large bowl. Gently toss to mix everything together.
  4. Scoop the mixture into taco shells or serve it on a bed of tortilla chips for a lively presentation.
  5. Top with shredded cheese, a dollop of sour cream, and a sprinkle of fresh cilantro if desired.
